An easy recipe to keep for those unexpected guests.
1 cup sugar
2 cups fruit (any kind e.g. dates, sultanas)
60 gm (2 tblspn) melted butter
1 cup water (or combine with juice or marmalade)
2 cups SR flour
1 egg
Mix all together, stirring in the sifted flour last
Pour into a lined, medium cake tin
Cook for approx. one hour in a moderate oven (180 degrees)
Slice when cool. Can be kept in the freezer for snacks or dessert with ice cream or butter
